Default Intro and a few questions

Hi every one I'm Nat. I just bought a gs850l for five hundred bones and I am in the process of bringing her back from a 4 year retirement. Keep in mind while reading these questions that this is my first bike so if you could when you answer them explain things as if speaking to a 12 year old. or better yet a 17 year old they are real hard to get to...
Okay first off I'm glad to say my bike appears so far to have no electrical problems all nick nacks and gadgets work. When I brought it home I had to replace the battery and plugs to get it running. This is where the trouble began. As off this morning the bike will start and run as long as the choke is pulled. At first it had to be completely on but after some tinkering with the main idle I got the choke down to 1/4. Then I found this web site and learned of the scale rust that was most likely clogging my jets... being the fool that I am I began a tear down of the carbs and low and behold rust rust every where. So far so good on that part cleaning is going nicely.
now for the questions... What should I use to clean my tank and should I remove the petcock or leave it on for cleaning? Also should any part of my carbs be lubed while I have them off And what should I use to do so? At what rpm should my bike idle with the choke on and off?And last but not least arent you glad i warned you of my ignorance... Thanks in advance!
