1977 GS750 Project Ideas

Hey everyone, this is my first post on the forum, but I hope to become a dependable member. As a quick introduction, I have a few years of experience motorcycle mechanics and attended some time at MMI before realizing this is a passion as a hobby rather than a career as it takes the fun out of motorcycles for me that way.

Anyways, I have just recently bought myself a couple of bikes for a stupid low price, one of which is a 1977 Suzuki GS750. After doing some research I realized I have a sweet bike with a lot of history behind it. Everything on it is pretty much original but it's been sitting outside for at least 4 years. I have it running good but I was wanting to get some opinions on what I should do with it. Should I completely restore it to its original glory? Or should I do a scrambler/tracker? Cafe? Brat? I'm a big fan of the scrambler styles, but wasn't sure if it's practical for a bigger bike like this. I'm building this bike to keep for myself, not to sell.

Any tips or previous builds that I can check out are helpful, all opinions are welcome. I just wanted to see what you all had to say. Thanks!! 😁
