Default 1974 TS 185 restoration

Hello all,
Just joined and need some guidance. I picked up a 1974 TS 185 that has sat since 1988 or so. I am tearing it down to replace the crank seals, paint the frame, and redo almost everything. I am replacing the front wheel bearings and seals and noticed that the bearing on one side had on open face and the other was open on both sides. The new bearings I got were of course both sealed. Is there an advantage to running the bearings open faced? I can't come up with any. Also, any idea how much grease should be in the speedometer well? There is a little bit in there, but not sure I would call it grease after 52 years. Many more questions to come, I'm sure. Thanks in advance.
